PREPARATION
Preheat your oven to 400°F for roasting the sweet potatoes.
Toss the diced sweet potatoes with half of the olive oil and a pinch of salt and pepper. Spread them on a baking sheet and roast in the oven for about 20-25 minutes, or until tender and slightly caramelized.
While the sweet potatoes are roasting, slice the turkey sausage into rounds.
