INGREDIENTS
130g Chicken Thigh (Boneless, Skinless)
125g Green Beans
1 tsp Olive Oil
125g Sweet Potato
1 tsp Butter
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the chicken thigh dry and season both sides lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the chicken thigh. Sear for about 5-6 minutes per side until fully cooked and nicely browned. Set aside to rest.
While the chicken is cooking, steam or boil the green beans until just tender, about 4-5 minutes. Drain well.
In a small pan, heat the olive oil over medium heat. Add minced garlic and quickly sauté until fragrant, about 30 seconds, then toss in the green beans to coat thoroughly.
Peel and dice the sweet potato, then steam or boil until soft, about 10-12 minutes. Transfer to a bowl and mash with butter, adding salt and pepper to taste.
Plate the dish by placing a portion of sweet potato mash, arranging garlic green beans on the side, and slicing the seared chicken thigh. Serve warm and enjoy!
