Savor a vibrant stir-fry featuring crispy tofu cubes infused with a delicate sesame kick, mixed with a medley of fresh vegetables. This colorful dish combines crunch and tenderness, enhanced with aromatic garlic and ginger, creating a satisfying and balanced meal.
INGREDIENTS
300g Extra Firm Tofu
1 medium Red Bell Pepper
1 cup Broccoli
1 medium Carrot
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
2 cloves Garlic
1 tsp Fresh Ginger
1 tsp Sesame Seeds
1 tsp Cornstarch
PREPARATION
Press and drain the tofu to remove excess moisture, then cut it into 1-inch cubes.
Toss the tofu cubes in a light coating of cornstarch to help achieve extra crispiness.
Heat the sesame oil in a non-stick skillet or wok over medium-high heat.
Add the tofu and stir-fry until all sides are golden and crispy, about 6-8 minutes. Remove the tofu from the pan and set aside.
In the same pan, add finely minced garlic and grated fresh ginger, and sauté for 30 seconds until fragrant.
Add sliced red bell pepper, broccoli florets, and carrot slices. Stir-fry the vegetables for about 3-4 minutes, keeping them crisp.
Return the crispy tofu to the pan and drizzle with low-sodium soy sauce. Toss gently to combine all ingredients.
Finish by sprinkling sesame seeds over the stir-fry before serving.
