INGREDIENTS
1 medium Bell Pepper (150g)
6 ounces Lean Ground Turkey (170g)
0.5 cup Cooked Brown Rice (100g)
1 teaspoon Olive Oil (4.5g)
0.25 cup Diced Onion (40g)
1 clove Minced Garlic (3g)
0.5 teaspoon Dried Oregano
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Slice the bell pepper in half lengthwise and remove the seeds and membranes. Lightly brush with olive oil and set aside.
In a skillet over medium heat, add olive oil and sauté the diced onion until translucent, about 2-3 minutes.
Add the minced garlic and sauté for an additional minute until fragrant.
Add the lean ground turkey to the skillet and cook until browned, breaking it up with a spatula as it cooks. Season with salt, pepper, and dried oregano.
Stir in the cooked brown rice until well combined. Adjust seasonings to taste.
Spoon the turkey and rice mixture into the bell pepper halves, packing it well.
Place the stuffed bell peppers in a baking dish and cover with foil. Bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.
Remove the foil and bake for an additional 5 minutes to lightly roast the tops. Serve warm.
