INGREDIENTS
1 medium Sweet Potato (130g)
2 Turkey Sausage links (approx. 112g total)
2 large Eggs (approx. 100g total)
1/2 medium Red Bell Pepper (75g)
1 cup Spinach (30g)
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes for even crisping.
Dice the red bell pepper and roughly chop the spinach. Set aside.
Heat the olive oil in a large nonstick skillet over medium heat.
Add the sweet potato cubes to the skillet, seasoning lightly with salt and pepper. Cook, stirring occasionally, for about 8-10 minutes until the potatoes start to soften and crisp up on the edges.
Slice the turkey sausage links into rounds and add to the skillet. Continue cooking for another 5 minutes until the sausage is heated through and lightly browned.
Push the hash to one side of the skillet. Crack the eggs into the open space and gently scramble or fry them to your preference, mixing slightly with the vegetables once almost set.
Stir in the diced red bell pepper and spinach, cooking for an additional 1-2 minutes until the spinach wilts and the bell pepper softens slightly.
Taste and adjust seasonings with salt and pepper as needed before serving.
