Hearty Sweet Potato and Ground Beef Hash
A comforting hash featuring lean ground beef, sweet potato, and vibrant vegetables, finished with a perfectly cooked egg on top. This dish is savory, satisfying, and versatile enough to serve for breakfast, lunch, or dinner.
INGREDIENTS
6 oz Lean Ground Beef (93% lean)
1 small Sweet Potato (150g)
1/2 medium Red Bell Pepper
1/2 small Yellow Onion
1 Large Egg
1 tsp Olive Oil
1/2 tsp Paprika
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small, bite-sized cubes. Dice the red bell pepper and onion as well.
Heat the olive oil in a non-stick skillet over medium heat.
Add the diced onion and red bell pepper to the skillet and sauté until they soften, about 3-4 minutes.
Add the diced sweet potato to the skillet and cook for an additional 5 minutes, stirring occasionally.
Push the vegetables to the side of the skillet and add the ground beef. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes.
Mix the vegetables with the ground beef, and season the mixture with paprika, salt, and pepper. Continue cooking for another 2 minutes to blend the flavors.
In a separate small pan, fry or scramble the egg to your desired doneness.
Plate the hash and top it with the cooked egg. Serve warm.
