6.5 oz Salmon Fillet
1 medium Sweet Potato (approx. 150g)
1 cup Green Beans
2 tsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Place the salmon fillet on a lined baking tray. Drizzle with 1 teaspoon of olive oil and season lightly with salt and pepper.
Bake the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork.
Meanwhile, peel and cut the sweet potato into cubes. Boil in water until tender (about 10-12 minutes), then drain.
Mash the sweet potatoes using a fork or potato masher. Stir in a pinch of salt and half of the remaining olive oil.
Trim the green beans and steam or blanch them for 4-5 minutes until crisp-tender.
