INGREDIENTS
1 cup Cooked Black Beans (172g)
1/4 cup Reduced-Fat Cheddar Cheese (28g)
1/2 cup Fat-Free Greek Yogurt (123g)
1/4 medium Avocado (50g)
1/2 tsp Chili Powder
1/2 tsp Ground Cumin
1/4 tsp Garlic Powder
1 tsp Olive Oil Spray
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, mash the cooked black beans until mostly smooth, leaving some texture for bite.
Stir in chili powder, cumin, garlic powder, salt, and pepper until well combined.
Using your hands, form the mashed bean mixture into small, bite-sized patties on a parchment-lined baking sheet.
Lightly spray the patties with olive oil spray.
Bake in the preheated oven for 15-20 minutes or until the edges are crisp.
A minute before finishing, sprinkle the shredded reduced-fat cheddar cheese on top of each patty and return to the oven until the cheese melts.
While the patties are baking, dice the avocado and gently toss with a pinch of salt to create a quick avocado salsa.
Serve the crispy bean nacho bites hot with a side of fat-free Greek yogurt for dipping and a spoonful of avocado salsa on top.
