INGREDIENTS
5 ounces Top Sirloin Steak
1 medium Potato
1/2 tablespoon Extra Virgin Olive Oil
1 cup Fresh Green Beans
2 Garlic cloves
1 tablespoon Fresh Mixed Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for the potatoes.
Wash and dice the potato into small cubes. Toss the cubes in 1/2 tablespoon olive oil, salt, and pepper.
Spread the potatoes on a baking sheet and roast for 25 minutes, until they are golden and crispy.
While the potatoes are roasting, pat the steak dry and season both sides with salt, pepper, minced garlic (use one clove minced), and chopped fresh herbs.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare (adjust the time according to your preferred doneness). Remove the steak from the pan and let it rest.
Trim the ends of the green beans and heat a separate pan with a splash of olive oil. Add the remaining minced garlic and sauté for 1 minute until fragrant, then add the green beans. Sauté for about 5 minutes until they are tender yet crisp.
Plate the steak alongside the roasted potatoes and sautéed green beans. Optionally drizzle a tiny bit of the remaining olive oil on the greens. Serve immediately.
