INGREDIENTS
6 oz Chicken Breast (~170g)
2 cups Spinach (~60g)
2 tsp Olive Oil (~9g)
2 cloves Garlic (~6g)
1/2 tsp Dried Thyme
1/2 tsp Dried Rosemary
Salt and Black Pepper to taste
PREPARATION
Pat the chicken breast dry with a paper towel and season both sides with salt, pepper, dried thyme, and dried rosemary.
Heat a skillet over medium-high heat and add 1 tsp of olive oil.
Add the chicken breast to the skillet and sear for about 4-5 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken and set aside to rest.
Reduce heat to medium, add the remaining 1 tsp of olive oil along with minced garlic, and sauté for about 30 seconds until fragrant.
Add the spinach to the skillet and cook, stirring frequently, until just wilted, about 2-3 minutes. Season lightly with salt and pepper.
Slice the chicken breast and serve it over a bed of sautéed spinach. Drizzle any remaining pan juices over the top for added flavor.
