INGREDIENTS
300g Extra-Firm Tofu
100g Shelled Edamame
1 medium Red Bell Pepper
100g Broccoli
50g Snap Peas
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 clove Garlic
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
In a bowl, gently toss the tofu cubes with a pinch of salt and a small amount of cornstarch if desired for extra crispness.
Heat sesame oil in a non-stick skillet over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add minced garlic and sauté briefly until fragrant.
Add chopped red bell pepper, broccoli florets, and snap peas, and stir-fry for 3-4 minutes until vegetables are crisp-tender.
Stir in the shelled edamame and fried tofu, and drizzle with soy sauce. Toss gently to combine all ingredients.
Plate the stir-fry and finish with a sprinkle of sesame seeds on top. Serve immediately.
