INGREDIENTS
200g Firm Tofu
1/2 cup Shelled Edamame (approx. 100g)
1 cup Chopped Broccoli
1/2 medium Red Bell Pepper
1/2 cup Snap Peas
1 tsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Seeds
1 clove Minced Garlic
1 tsp Fresh Minced Ginger
1/2 tbsp Cornstarch
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut into bite-sized cubes.
In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a non-stick pan over medium heat. Add the tofu and fry until golden and crispy on all sides. Remove tofu and set aside.
In the same pan, add minced garlic and ginger, and sauté briefly until fragrant.
Add chopped broccoli, sliced red bell pepper, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
Return the crispy tofu to the pan along with the shelled edamame.
Drizzle low sodium soy sauce over the stir-fry and toss to combine well.
Sprinkle sesame seeds over the top and stir-fry for an additional minute to blend the flavors.
Serve immediately and enjoy your balanced, nutrient-packed meal.
