INGREDIENTS
4 large Eggs (200g)
2 large Egg Whites (66g)
1/4 cup Crumbled Feta Cheese (38g)
1 cup Fresh Spinach (30g)
1/2 medium Red Bell Pepper (45g)
2 tbsp Mixed Fresh Herbs (6g)
1 small Sweet Potato (100g)
1 tsp Olive Oil (4.5g)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Wash and scrub the small sweet potato, then cut it into 1/2-inch cubes. Toss the cubes with olive oil, a pinch of salt, pepper, and half of the mixed herbs.
Spread the sweet potato evenly on a baking sheet and roast in the preheated oven for 20-25 minutes until tender and slightly caramelized, stirring halfway through.
While the sweet potatoes roast, chop the red bell pepper and roughly chop the fresh spinach. Reserve a sprinkle of the remaining herbs for garnishing.
In a mixing bowl, crack 4 large eggs and add 2 egg whites. Whisk together until smooth.
Gently fold in the chopped spinach, red bell pepper, crumbled feta cheese, and the remaining herbs into the egg mixture. Season with a bit of salt and pepper.
Heat a nonstick skillet over medium-low heat and lightly grease it if needed. Pour in the egg mixture, allowing it to cook slowly until the edges set.
Cover the skillet with a lid to help the top cook evenly. Once set, gently stir or break into bite-sized pieces to form egg bites, cooking until desired consistency.
Plate a serving of the herb-roasted sweet potatoes alongside the savory egg bites. Garnish with an extra sprinkle of fresh herbs if desired and serve warm.
