INGREDIENTS
6 oz Salmon Fillet
1 cup Brussels Sprouts
1 cup Cauliflower
1 Garlic Clove
2 Tbsp Nonfat Greek Yogurt
1/2 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down for about 3-4 minutes, then flip and cook for an additional 3 minutes or until desired doneness.
Meanwhile, preheat the oven to 400°F. Toss Brussels sprouts with 1/2 teaspoon olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 15-20 minutes until tender and lightly browned.
Steam the cauliflower florets until very tender, about 8-10 minutes. In a blender or with a hand masher, combine the steamed cauliflower with one garlic clove and blend until smooth. Adjust seasoning with salt and pepper.
Stir in 2 tablespoons of nonfat Greek yogurt into the cauliflower mash for added creaminess.
Plate the seared salmon alongside a serving of roasted Brussels sprouts and a generous scoop of garlic cauliflower mash. Serve warm and enjoy.
