INGREDIENTS
4.5 oz Pork Loin
150 g Baby Potatoes
0.5 tbsp Olive Oil
2 cloves Garlic, minced
1 tsp Fresh Rosemary, chopped
1 tsp Fresh Thyme, chopped
Salt, to taste
Black Pepper, to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Pat the pork loin dry with paper towels. In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
Rub the herb mixture evenly over the pork loin.
Cut the baby potatoes in halves or quarters if they are larger, and toss them with a little salt, pepper, and any remaining herb mixture if desired.
Place the pork loin on a baking tray and arrange the potatoes around it in a single layer.
Roast in the oven for about 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are golden and crispy.
Remove from the oven and let the pork rest for a few minutes before slicing and serving alongside the crispy roasted potatoes.
