Dice bell pepper and onion into similar-sized pieces
In a bowl, toss sweet potato, bell pepper, and onion with 1 teaspoon olive oil, garlic powder, paprika, salt, and black pepper
Preheat air fryer to 400°F (200°C)
Spread vegetable mixture in the air fryer basket in a single layer
Air fry for 15-18 minutes, shaking the basket halfway through, until sweet potatoes are crispy and golden brown
While vegetables are cooking, heat a non-stick pan over medium heat with remaining oil
Cook turkey sausage links until browned and cooked through, about 5-6 minutes, turning occasionally
Remove sausage, slice into rounds, and set aside
In the same pan, cook eggs to your preferred style (sunny-side up, over-easy, or poached)
Transfer the crispy vegetable hash to a bowl
Top with sliced turkey sausage and cooked eggs
Season with additional salt and pepper if desired
Serve immediately while hot
