Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a succulent seared salmon fillet complemented by tender steamed asparagus and a creamy cauliflower mash. The dish is lightly drizzled with olive oil and finished with a burst of lemon, perfect for a nutritious and satisfying dinner.
INGREDIENTS
6.5 ounces Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 teaspoon Olive Oil
1 tablespoon Lemon Juice
Salt & Pepper (to taste)
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add half the olive oil.
Once the oil is hot, place the salmon fillet skin-side down and sear for about 3-4 minutes. Flip the fillet and cook for an additional 3 minutes, or until cooked to your liking.
While the salmon cooks, bring a pot of water to a simmer and steam the asparagus for about 4-5 minutes until tender but still bright green.
In a small pot, steam the cauliflower for 8-10 minutes until soft. Transfer to a bowl and mash with the remaining olive oil, lemon juice, salt, and pepper until smooth.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Drizzle a little extra lemon juice over the salmon if desired.
