Preheat your oven to 400°F (200°C).
On a baking sheet, toss the Brussels sprouts with olive oil, salt, and pepper. Spread them out in a single layer for even roasting.
Place the Brussels sprouts in the oven and roast for 20-25 minutes, stirring halfway through, until they are tender and slightly crispy on the edges.
While the Brussels sprouts are roasting, prepare the salmon. In a small bowl, mix the maple syrup with a pinch of salt and pepper.
Place the salmon fillet on a separate baking dish lined with parchment paper. Brush the maple syrup mixture evenly over the top of the salmon.
Once the Brussels sprouts have been roasting for about 10 minutes, place the salmon in the oven. Bake for 12-15 minutes until the salmon is just cooked through and flakes easily with a fork.
Prepare your quinoa if not already cooked. Warm it gently if needed.
Plate the quinoa first, then top with the maple-glazed salmon, and serve with roasted Brussels sprouts on the side. Enjoy your balanced and flavorful meal!
