INGREDIENTS
7 large Egg Whites (approx 210g)
1 large Whole Egg (approx 50g)
1 cup Fresh Spinach (approx 30g)
1 teaspoon Olive Oil (approx 5g)
1 slice Whole Grain Bread (approx 30g)
1 tablespoon Fresh Parsley
1 tablespoon Fresh Chives
Salt and Pepper to taste
PREPARATION
Prepare all ingredients by separating egg whites from one whole egg and lightly chopping the fresh parsley and chives.
In a bowl, whisk together the egg whites and whole egg until well combined.
Heat a non-stick skillet over medium heat and lightly coat with a portion of olive oil if needed.
Pour the egg mixture into the skillet and gently scramble, allowing the eggs to set slowly. When they are nearly cooked, sprinkle in the chopped parsley and chives, then season with salt and pepper.
In a separate small pan, heat the remaining olive oil and quickly sauté the fresh spinach until just wilted, about 1-2 minutes.
Toast the whole grain bread until golden brown.
Plate the fluffy scramble alongside the sautéed spinach and the toast. Serve immediately.
