Enjoy a delightful twist on your regular salmon dinner with a crunchy pistachio crust paired perfectly with zesty lemon-herb roasted asparagus. This dish combines tender, flaky salmon with a nutty coating and bright, aromatic greens to deliver a balanced and scrumptious meal.
INGREDIENTS
6 ounces Salmon Fillet
0.5 ounce Shelled Pistachios
8 spears Asparagus
1 teaspoon Extra Virgin Olive Oil
1/2 Lemon
2 tablespoons Fresh Herbs (Parsley & Dill)
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Finely chop the shelled pistachios and mix with 1 tablespoon of chopped fresh herbs, a pinch of salt, and black pepper.
Pat dry the salmon fillet and season lightly with salt and pepper. Press the pistachio mixture evenly over the top of the salmon to form a crust.
Trim the asparagus ends and place them on a baking sheet. Drizzle with olive oil, squeeze the juice from half a lemon over them, and sprinkle with a bit of salt, pepper, and remaining herbs.
Place both the salmon and asparagus in the preheated oven. Roast the asparagus for about 10-12 minutes until tender, and bake the salmon for 12-15 minutes until it flakes easily with a fork.
Plate the salmon alongside the roasted asparagus and serve immediately with an extra squeeze of lemon if desired.
