INGREDIENTS
250g Firm Tofu
1 cup chopped Broccoli (91g)
1 cup diced Red Bell Pepper (150g)
1/2 cup Snap Peas (50g)
1 medium Carrot (61g)
1/3 cup Shelled Edamame (50g)
1 tbsp Sesame Oil (14g)
1 tbsp Sesame Seeds (9g)
2 cloves Garlic
1 tsp grated Ginger
PREPARATION
Press the tofu for 15-20 minutes to remove excess moisture, then cut into 1-inch cubes.
In a bowl, toss the tofu cubes lightly with a pinch of salt and a bit of cornstarch if desired for extra crispiness.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and fry until golden and crispy on all sides. Remove tofu and set aside.
In the same skillet, add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
Add broccoli, red bell pepper, snap peas, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
Return the crispy tofu to the skillet and toss in the shelled edamame.
Sprinkle with sesame seeds, stir everything together, and heat through for another 1-2 minutes.
Serve hot as a balanced and flavorful meal.
