Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a delightful plate of seared salmon paired with tender steamed asparagus and a creamy cauliflower mash enriched with a touch of nonfat Greek yogurt. The dish offers succulent, perfectly seared salmon complemented by vibrant green asparagus, and a silky, savory mash that's both light and satisfying.
INGREDIENTS
150g Salmon Fillet
1 cup Asparagus (134g)
1 cup Cauliflower (107g)
1/3 cup Nonfat Greek Yogurt (80g)
1 Garlic Clove
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Once hot, sear the salmon skin-side down (if applicable) for about 4 minutes, then flip and sear for another 3-4 minutes until cooked through.
Meanwhile, steam the asparagus in a steamer or a covered pan with a little water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Add the steamed cauliflower, raw garlic clove, and nonfat Greek yogurt to a blender or use a hand masher, and blend or mash until smooth.
Adjust seasoning of the mash with salt and pepper.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Serve immediately.
