5 oz Shrimp (raw)
1/2 cup cooked Brown Rice
1 cup cooked Spinach
1.5 tbsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Rinse the shrimp and pat dry. Season lightly with salt and pepper.
Bring a small pot of water to boil and steam the brown rice until tender, about 20 minutes, then set aside.
While the rice steams, heat a non-stick skillet over medium-high heat. Add the shrimp and sear for about 2 minutes per side until they turn pink and opaque. Remove shrimp and set aside.
Reduce the heat to medium and add olive oil to the same pan. Add minced garlic and sauté until fragrant, about 30 seconds.
