INGREDIENTS
6 egg whites (approx 198g)
2 slices turkey bacon (56g)
1 cup raw spinach (30g)
1.5 teaspoons olive oil (7.5g)
1 slice whole wheat toast (40g)
1 ounce feta cheese (28g)
PREPARATION
Preheat a non-stick skillet over medium heat and add 1.5 teaspoons of olive oil.
Crisp the turkey bacon slices in the skillet for 3-4 minutes on each side until golden and crispy. Remove and set aside.
In the same skillet, add the raw spinach and sauté briefly until just wilted, about 1-2 minutes. Transfer the spinach to a bowl.
Pour the egg whites into the skillet and cook over medium-low heat, gently stirring to create soft curds.
Crumble the turkey bacon and add it back into the skillet with the stirring egg whites. Once the scramble is softly set, fold in the sautéed spinach.
Transfer the scramble to a serving plate, top with crumbled feta cheese, and serve alongside a slice of toasted whole wheat bread.
