INGREDIENTS
6.5 oz Shrimp (184g)
0.75 cup Cooked Brown Rice (139g)
1 cup Green Beans (125g)
1.5 tsp Olive Oil (7.5g)
2 cloves Garlic
1 tsp Lemon Zest
Salt and Pepper to taste
PREPARATION
Rinse the shrimp under cold water and pat dry with a paper towel. Season lightly with salt and pepper.
Heat 1.5 teaspoons of olive oil in a large skillet over medium-high heat. Once hot, add the shrimp and sear for about 2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the green beans and a pinch of salt, stirring occasionally. Sauté the green beans for about 4-5 minutes until they are tender-crisp.
While the green beans are cooking, warm the cooked brown rice either in the microwave or in a small saucepan over low heat.
Return the shrimp to the skillet, add the lemon zest, and toss gently with the green beans to combine the flavors.
Plate the brown rice as a base, then top with the garlic green beans and seared shrimp. Adjust seasoning with additional salt and pepper if needed.
