INGREDIENTS
5 oz Sirloin Steak
1 cup Green Beans
1 tbsp Olive Oil
2 cloves Garlic
1 medium Sweet Potato
1/4 cup Nonfat Milk
1 tsp Butter
Salt and Pepper to taste
PREPARATION
Bring the sirloin steak to room temperature and season it generously with salt and pepper on both sides.
Preheat a skillet over medium-high heat. Add half of the olive oil into the skillet and sear the steak for about 3-4 minutes on each side for medium-rare, or adjust time for desired doneness. Once cooked, transfer the steak to a plate and let it rest.
While the steak rests, trim the green beans and blanch them in boiling water for 2-3 minutes until bright green and slightly tender. Drain and toss the beans with the remaining olive oil, minced garlic, and a pinch of salt. Sauté for an additional 2 minutes in a hot pan to infuse the garlic flavor.
Peel and cube the sweet potato. Boil the cubes in lightly salted water for about 15-20 minutes until tender. Drain and transfer them to a bowl.
Mash the sweet potato with nonfat milk and butter until smooth. Season with salt and pepper to taste.
Slice the rested steak against the grain and serve alongside the garlic green beans and mashed sweet potatoes.
