1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1 tsp Olive Oil (5g)
2 cloves Garlic (6g)
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat the salmon dry and season it with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Place the salmon skin-side down in the skillet and sear for about 3-4 minutes until the skin is crisp. Flip and cook for another 3-4 minutes until cooked through.
Meanwhile, steam or blanch the green beans until just tender, about 4-5 minutes.
In a small saucepan, steam the cauliflower until soft, about 8 minutes.
Transfer the steamed cauliflower to a bowl, add the remaining olive oil and minced garlic, and mash until smooth. Season with a pinch of salt and pepper to taste.
Sauté the garlic briefly in a separate pan if you prefer a more pronounced roasted garlic flavor, then toss with the green beans.
