Savor a perfectly seared salmon fillet paired with tender steamed asparagus and a creamy cauliflower mash enriched with non-fat Greek yogurt. This dish brings together the rich flavors of the ocean with a vibrant, vegetable-forward side, making it a satisfying and balanced dinner choice.
INGREDIENTS
200g Salmon Fillet
1 cup chopped Asparagus (134g)
1 cup Cauliflower florets (107g)
1/2 cup Non-Fat Greek Yogurt (125g)
1 teaspoon Olive Oil
Salt, Pepper, Garlic Powder (to taste)
PREPARATION
Pat the salmon dry and season with salt, pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat with a teaspoon of olive oil.
Once the oil is shimmering, place the salmon skin-side down and sear for about 4-5 minutes, then flip and cook for another 3-4 minutes until desired doneness is reached.
Meanwhile, steam the asparagus in a steamer or over a pot of simmering water for 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam the cauliflower florets until very soft, about 8-10 minutes. Transfer to a bowl and mix in the non-fat Greek yogurt. Season with salt, pepper, and garlic powder, then blend until creamy with a fork or immersion blender.
Plate the salmon with a serving of steamed asparagus and a generous portion of cauliflower mash. Enjoy immediately.
