PREPARATION
Preheat your oven to 425°F (220°C).
Peel (if desired) and cut the half medium sweet potato into thin fries. Toss the fries with 1 teaspoon of olive oil, salt, and pepper.
Spread the sweet potato fries on a baking sheet lined with parchment paper and roast in the oven for 20-25 minutes, turning halfway through until they are crispy on the edges.
