INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the salmon, skin-side down if applicable, and sear for about 4 minutes. Flip and cook for an additional 3 minutes or until desired doneness is achieved.
Meanwhile, steam the cauliflower florets until tender (about 10 minutes). Once cooked, transfer to a bowl, add the olive oil, a pinch of salt and pepper, and mash until smooth. Adjust seasoning as needed.
Trim the green beans and blanch them in boiling water for 3 minutes, then shock in ice water to preserve their vibrant color.
In a small pan, heat a little olive oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds), then toss in the green beans along with a drizzle of lemon juice. Season lightly with salt and pepper.
Plate the seared salmon alongside a generous serving of cauliflower mash and garlic green beans. Serve immediately.
