INGREDIENTS
6 oz Salmon Fillet
1 cup Steamed Broccoli
1 cup Cauliflower
1/4 cup Nonfat Greek Yogurt
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper.
Heat a skillet over medium-high heat and add 1 teaspoon of olive oil.
Sear the salmon on each side for about 3-4 minutes until a golden crust forms and the center is just opaque.
While the salmon cooks, steam the broccoli until tender, approximately 4-5 minutes.
For the cauliflower mash, chop the cauliflower into florets and boil in lightly salted water until very tender, about 8-10 minutes.
Drain the cauliflower and transfer to a blender or use a potato masher, then add the peeled garlic clove and 1/4 cup nonfat Greek yogurt. Blend or mash until smooth, adjusting seasoning with salt and pepper.
Plate the seared salmon alongside the steamed broccoli and a generous serving of garlic cauliflower mash. Optionally, drizzle a touch more olive oil or a squeeze of lemon on the salmon.
