200g Green Beans

2 tbsp Cornstarch

PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu for at least 15 minutes to remove excess moisture. Then cut into 1-inch cubes.
In a bowl, gently toss the tofu cubes with low-sodium soy sauce, rice vinegar, a pinch of red pepper flakes (if using), and cornstarch until well coated.
Spread the tofu evenly on the prepared baking sheet and drizzle with half of the olive oil. Bake for 25-30 minutes, flipping halfway, until the tofu is crispy and golden brown.
While the tofu is baking, trim the ends of the green beans and rinse them. Steam or blanch the green beans for about 3-4 minutes until they are bright green but still crisp.
In a pan over medium heat, add the remaining olive oil. Sauté minced garlic until fragrant (about 30 seconds), then add the green beans and toss to coat with garlic and oil. Sauté for an additional 2 minutes.
