INGREDIENTS
6 oz Lean Ground Turkey (~170g)
1 large Bell Pepper (~160g)
1/2 cup Cauliflower Rice (~80g)
1/4 cup Diced Tomatoes (~60g)
1/4 cup chopped Onion (~40g)
1 clove Garlic
1 tsp Olive Oil
1/4 cup Shredded Low-Fat Cheddar Cheese (~28g)
Spices (Cumin, Salt, Pepper) to taste
PREPARATION
Preheat your oven to 400°F.
Cut the top off the bell pepper and remove the seeds and membranes. Set aside.
In a pan, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened, about 2-3 minutes.
Add the lean ground turkey to the pan. Cook until browned and fully cooked, breaking it apart with a spatula.
Stir in the cauliflower rice and diced tomatoes. Season with cumin, salt, and pepper. Let the mixture simmer for 3-4 minutes until flavors meld.
Spoon the turkey and vegetable mixture into the hollowed bell pepper.
Place the stuffed pepper on a baking dish. Top with shredded low-fat cheddar cheese.
Bake in the preheated oven for 15-20 minutes until the pepper is tender and the cheese is melted.
Remove from oven, let cool slightly, and serve.
