INGREDIENTS
4 oz Lean Ground Beef
1/2 cup Black Beans
1/4 cup Reduced Fat Cheddar Cheese
1/2 cup Diced Tomatoes
1 tsp Chili Powder
1 tsp Cumin
1 clove Minced Garlic
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
In a medium skillet, warm a splash of water over medium heat (or a minimal amount of oil if preferred). Add the minced garlic and sauté until fragrant.
Add the lean ground beef to the skillet, breaking it up as it cooks. Season with chili powder, cumin, salt, and pepper. Cook until the beef is browned and cooked through.
Stir in the diced tomatoes and black beans into the beef mixture, and let it simmer for 3-4 minutes to allow the flavors to meld.
Transfer half of the beef and bean mixture into a small baking dish, then sprinkle half of the reduced fat cheddar cheese on top. Layer the remaining beef and bean mixture, and finish with the rest of the cheese.
Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and allow to cool for a few minutes before serving.
