INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Extra Virgin Olive Oil
1 clove Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry and season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is hot, place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes; then flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon is cooking, trim the green beans and mince the garlic.
In a separate pan, lightly sauté the green beans with half the minced garlic (reserve the remaining garlic for the mash) over medium heat for about 4-5 minutes until crisp-tender.
Steam the cauliflower florets until very tender, about 8-10 minutes.
Transfer the steamed cauliflower to a bowl and mash with the remaining garlic, a pinch of salt, and pepper until smooth and creamy. If desired, add a tiny drizzle of olive oil for a silkier texture.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
