INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 tsp Olive Oil
2 cloves Garlic
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil.
Place the salmon skin-side down (if applicable) and sear for about 3 minutes, then flip and cook for an additional 3 minutes, or until the salmon is cooked through.
In the meantime, steam the green beans until they are tender but still crisp, about 4-5 minutes. In a small pan, lightly sauté one minced garlic clove in a teaspoon of olive oil and toss the steamed green beans in the garlic oil.
For the cauliflower mash, steam the cauliflower florets along with the remaining minced garlic (or finely chopped garlic from the 2 cloves) until very soft, around 6-8 minutes.
Transfer the steamed cauliflower and garlic to a bowl and mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm and enjoy!
