INGREDIENTS
7 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower Florets
1 tsp Olive Oil (for mash)
1 tbsp Olive Oil (extra for mash)
Salt and Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat with a small drizzle of olive oil.
Season the salmon fillet with salt and pepper on both sides.
Place the salmon fillet in the skillet skin-side down (if applicable) and sear for about 3-4 minutes until a crisp crust forms. Flip and cook for an additional 3-4 minutes until cooked through. Remove from heat and set aside.
While the salmon cooks, steam the asparagus in a steamer or in a small saucepan with a little water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam or boil the cauliflower florets until soft (about 8-10 minutes). Drain and transfer to a bowl.
Add 1 tsp olive oil and 1 tbsp olive oil to the cauliflower, then mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
