INGREDIENTS
6 ounces Turkey Breast (170g)
1 tsp Olive Oil (for searing)
1 tsp Olive Oil (for mash)
1 clove Garlic, minced
1 cup Green Beans (100g)
1 medium Sweet Potato (150g)
1/2 tsp Butter
PREPARATION
Pat the turkey breast dry and season with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Sear the turkey breast for about 3-4 minutes on each side until golden brown and cooked through.
Meanwhile, bring a small pot of water to a boil. Add the sweet potato (peeled and cubed) and cook until tender, about 10-12 minutes.
In another pan, heat 1 teaspoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, then add the green beans and cook for 3-5 minutes until tender-crisp.
Drain the sweet potatoes and mash with a fork or potato masher. Stir in 1/2 teaspoon of butter, and season with salt and pepper to taste.
Plate the seared turkey breast alongside a serving of garlic green beans and a generous scoop of sweet potato mash. Serve warm.
