INGREDIENTS
4 oz Chicken Breast
1 medium Russet Potato (≈150g)
1/4 cup Skim Milk
1 cup Green Beans
2 cloves Garlic
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for the green beans.
Season the chicken breast with salt and pepper. Heat a non-stick skillet over medium-high heat with 1 teaspoon of olive oil. Sear the chicken on both sides until golden and cooked through, about 5-6 minutes per side. Remove and let rest.
While the chicken is cooking, peel and cube the russet potato. Boil in lightly salted water until tender, about 15 minutes.
In a small pan, sauté minced garlic in a splash of olive oil for about 1 minute until fragrant.
Drain the potatoes and mash them with the warmed skim milk and sautéed garlic until smooth and creamy. Season with salt and pepper.
Trim the ends of the green beans and toss them lightly with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 10-12 minutes until tender and slightly crisp.
Plate the seared chicken with a side of creamy garlic mashed potatoes and roasted green beans. Serve immediately.
