INGREDIENTS
6 oz Salmon Fillet (170g)
100g Sweet Potato
75g Green Beans
1 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat. Pat the salmon dry and season both sides with salt and pepper.
Sear the salmon skin-side down for about 3-4 minutes, then flip and cook for another 3-4 minutes until just cooked through, maintaining a slight translucency in the center.
Meanwhile, peel and cube the sweet potato. Boil until tender, then mash with a fork until smooth, seasoning lightly with salt and pepper.
Trim the ends of the green beans. In a small pan, heat 1 teaspoon of olive oil over medium heat, add thinly sliced garlic, and sauté until fragrant.
Add the green beans to the garlic, cooking for about 3-4 minutes until they are crisp-tender. Finish with a squeeze of lemon juice and a pinch of salt.
Plate the salmon alongside a scoop of sweet potato mash and a serving of garlic green beans. Serve immediately and enjoy!
