INGREDIENTS
3 oz Extra Firm Tofu (85g)
1/2 cup Shelled Edamame (77g)
3 oz Cooked Shrimp (85g)
1 cup Spinach (30g)
1 tbsp Lemon Juice
Salt and Pepper to taste
Olive Oil Spray
PREPARATION
Press the tofu to remove excess moisture, then cut into small cubes.
Preheat your oven to 400°F. Lightly coat a baking tray with olive oil spray.
Toss the tofu cubes with a pinch of salt and pepper, and spread them out on the tray. Bake for 15-20 minutes until the edges are crisp, flipping halfway through.
While the tofu bakes, warm the cooked shrimp if needed and prepare the edamame according to package directions.
In a bowl, combine the fresh spinach with the warm edamame. Arrange the baked tofu and shrimp on top.
Drizzle the lemon juice over the bowl and finish with a light seasoning of salt and pepper. Serve immediately.
