PREPARATION
Rinse and pat dry the cod fillet. Season lightly with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Once hot, add the cod fillet and sear for about 3-4 minutes on each side until golden brown and cooked through.
