Enjoy a vibrant bowl featuring crispy, lightly seasoned tofu paired with protein-packed edamame and tender roasted vegetables. This balanced medley is elevated by a subtle crunch and a hint of citrus, delivering a satisfying and energizing meal ideal for a busy day.
INGREDIENTS
300g Firm Tofu
150g Shelled Edamame
100g Mixed Roasted Vegetables (Red Bell Pepper & Zucchini)
1 tbsp Cornstarch
Olive Oil Spray
1 tbsp Lemon Juice
Seasoned Salt & Pepper (to taste)
PREPARATION
Press the tofu for at least 15 minutes to remove excess water and cut into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch, a light spray of olive oil, salt, and pepper until evenly coated.
Preheat the oven to 425°F. Spread the mixed vegetables on a baking sheet, drizzle lightly with olive oil spray, season with salt and pepper, and roast for 15-20 minutes until tender and slightly charred.
While the vegetables roast, heat a non-stick skillet over medium-high heat. Add the tofu cubes and cook until each side is golden and crispy, about 3-4 minutes per side.
Meanwhile, warm the edamame in a small pot of boiling water for 3-4 minutes or heat in the microwave until heated through.
Assemble the bowl by placing the crispy tofu, warm edamame, and roasted vegetables together. Drizzle with lemon juice and a final light spray of olive oil if desired.
Serve immediately and enjoy your protein-packed, flavorful power bowl.
