350g Extra Firm Tofu
1/2 cup Shelled Edamame (75g)
1 tbsp Sesame Seeds
1 medium Red Bell Pepper
1 cup Broccoli
1 medium Carrot
1/2 medium Yellow Onion
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Fresh Ginger, minced
1 clove Garlic, minced
PREPARATION
Press the tofu to remove excess water for at least 15 minutes, then cut it into cubes.
In a bowl, toss the tofu cubes with a small drizzle of sesame oil and a sprinkle of half the sesame seeds.
Heat a non-stick pan over medium-high heat and add the tofu. Cook until all sides are golden and crispy, about 8-10 minutes. Remove tofu from the pan and set aside.
In the same pan, add the remaining sesame oil. Sauté minced garlic and ginger for about 30 seconds until fragrant.
Add chopped red bell pepper, broccoli, carrot, and onion to the pan. Stir-fry the vegetables for 4-5 minutes, ensuring they remain crisp.
Return the crispy tofu to the pan and add shelled edamame. Drizzle with low-sodium soy sauce and toss gently to combine.
