INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down if applicable, and sear for about 3-4 minutes until it develops a golden crust.
Flip the salmon and continue to cook for another 3-4 minutes until the salmon is just cooked through but remains moist.
While the salmon cooks, steam the asparagus in a steamer or in a covered pot with a small amount of water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam or boil the cauliflower florets until very tender, about 8-10 minutes.
Drain the cauliflower and mash it with a fork or blend until smooth. Stir in the teaspoon of olive oil, lemon juice, and a pinch of salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Optionally, drizzle a little extra lemon juice over the salmon for added brightness.
