Crispy Sweet Potato Gnocchi with Herb-Roasted Chicken and Sautéed Kale
Enjoy a hearty plate featuring crispy sweet potato gnocchi paired with perfectly herb-roasted chicken and a bed of vibrant sautéed kale. The dish brings together the sweet, tender notes of gnocchi, savory herbs on the chicken, and the fresh, slightly bitter crunch of kale for a balanced and satisfying meal.
INGREDIENTS
4 oz Chicken Breast
1 cup Sweet Potato Gnocchi
1 cup chopped Kale
3 tsp Olive Oil
Herbs and Spices (rosemary, thyme, garlic powder, salt, pepper)
PREPARATION
Preheat your oven to 400°F.
Pat the chicken breast dry and season it generously with rosemary, thyme, garlic powder, salt, and pepper. Rub 1 tsp of olive oil over the chicken and place it on a baking tray.
Roast the chicken in the preheated oven for about 18-20 minutes or until the internal temperature reaches 165°F. Once done, let it rest before slicing.
While the chicken is roasting, bring a pot of water to a gentle boil and cook the sweet potato gnocchi according to package or recipe instructions. Drain and pat dry.
Heat 1 tsp olive oil in a skillet over medium-high heat. Add the cooked gnocchi and sauté until the edges become crispy and golden.
In another pan, heat the remaining tsp of olive oil over medium heat. Add the chopped kale, season lightly with salt and pepper, and sauté until just wilted, about 2-3 minutes.
Plate the crispy sweet potato gnocchi, top with sliced herb-roasted chicken, and add a serving of sautéed kale on the side. Garnish with a sprinkle of extra herbs if desired and serve immediately.
