INGREDIENTS
4 oz Salmon Fillet
0.5 oz Shelled Pistachios
0.5 cup Cooked Quinoa
1/2 Lemon (zest & juice)
2 tbsp Fresh Herbs (Parsley & Dill)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Finely chop the pistachios until they form a coarse meal consistency.
Pat the salmon dry, then season lightly with salt and pepper. Press the chopped pistachios onto the top of the salmon fillet ensuring an even crust.
Place the salmon on a parchment-lined baking sheet and bake in the preheated oven for about 12 minutes or until the fish flakes easily with a fork.
While the salmon bakes, prepare the quinoa. In a bowl, combine the cooked quinoa with the olive oil, fresh lemon juice, lemon zest, and chopped herbs. Adjust salt and pepper as desired.
To serve, spoon a generous portion of the citrus-herb quinoa onto a plate and top with the crispy pistachio-crusted salmon. Garnish with extra herbs or a lemon wedge if desired.
