INGREDIENTS
1 medium Sweet Potato (114g)
3 ounces Lean Ham (85g)
3 Large Eggs
1 teaspoon Olive Oil
1/2 teaspoon Smoked Paprika
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small, even cubes for optimal crispness.
Heat the olive oil in a non-stick skillet over medium heat.
Add the sweet potato cubes to the skillet. Season with salt, pepper, and smoked paprika. Cook for about 8-10 minutes, stirring occasionally, until the sweet potato begins to soften and develop a golden crust.
Dice the lean ham into small pieces and add to the skillet. Continue to cook for another 3-4 minutes until the ham is warmed through and the sweet potatoes are tender.
Make three small wells in the hash, and crack a large egg into each well. Reduce the heat to low, and cover the pan. Cook until the egg whites are set but the yolks remain runny, about 3-4 minutes.
Once done, carefully plate the hash ensuring each serving includes a sunny-side up egg. Garnish with additional pepper if desired and serve immediately.
