1 tbsp Maple Syrup
1 cup chopped Cauliflower
1/4 cup Unsweetened Almond Milk
1 tsp Olive Oil (for mash)
1 tsp Olive Oil (for asparagus)
6 spears Asparagus
PREPARATION
Preheat your oven to 425°F. Line a baking sheet with parchment paper.
Place the salmon fillet on a small baking dish and brush with maple syrup. Let it marinate for 5 minutes.
Meanwhile, steam the chopped cauliflower until very tender, about 10 minutes.
Transfer the steamed cauliflower to a bowl and mash it with the almond milk and 1 tsp olive oil until smooth. Season with salt and pepper to taste.
