PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Press the tofu gently to remove excess water, then cut into 1/2-inch cubes.
In a bowl, gently toss the tofu cubes with soy sauce, sesame oil, minced garlic, salt, and pepper.
Spread the tofu evenly on one side of the baking sheet and place in the oven. Bake for 25-30 minutes, turning halfway through, until the tofu is golden and crispy.
While the tofu is baking, trim the woody ends off the asparagus and toss with a little olive oil (optional), salt, and pepper. Spread on another baking sheet and roast in the oven for 12-15 minutes until tender.
